ARTICHOKE SQUARES | |
2 tbsp. olive oil 1/2 c. minced onion 2 cloves garlic pressed 2 tbsp. minced parsley 1 tsp. oregano 4 eggs 1 (14 oz.) can artichoke hearts 1/4 c. dried bread crumbs 1/2 lb. finely shredded mozzarella cheese 1/2 tsp. salt 1/8 tsp. red pepper Heat oil and saute onion, garlic and parsley in small pan until onions are soft. In mixing bowl, beat eggs and stir in sauteed mixture. Drain artichoke hearts, squeeze out excess water. Chop artichoke and add them to the mixing bowl along with bread crumbs, cheese, salt, pepper and oregano. Mix well. Turn into lightly greased 9 inch square pan and bake in preheated 350 degree oven for 30 minutes. Great Appetizer! Make ahead of time, cut into squares and heat in microwave when ready to serve. |
