SOUTHWESTERN RICE 
1/2 c. chopped onion
3 tbsp. butter
4 c. cooked rice
1 sm. red or green hot pepper, minced
2 c. sour cream
1 c. cottage cheese
2 1/2 c. grated longhorn cheese (save 1/2 cup)
1 bay leaf, crumbled
Salt and pepper to taste
1 (4 oz.) can chopped green chiles

Saute onion in butter until limp. Combine with remaining ingredients except the 1/2 cup cheese; mix well. Place in a greased 2-quart casserole.

Cover and bake in 375 degree oven for 25 minutes. Remove and sprinkle the remaining 1/2 cup cheese on top. Bake uncovered 10 more minutes. Yield 10-12 servings.
