HAM AND CHEESE QUICHE 
1 pie crust shell
3 eggs, beaten
1/2 c. mayonnaise
1/2 c. evaporated skim milk
2 tbsp. flour
3 drops hot pepper sauce
3/4 tsp. dry mustard
1/2 c. sliced onion
1/2 c. shredded sharp cheddar cheese
2 c. shredded Swiss cheese
1 can deviled ham

Preheat oven and baking sheet to 450 degrees. Bake pricked pie crust on preheated baking sheet for 6 minutes. Remove pie crust from oven. Reduce oven temperature to 325 degrees.

Mix together eggs, mayonnaise, evaporated milk, flour, dry mustard, and hot pepper sauce until smooth. Stir in onions, cheese, and deviled ham.

Pour into pie crust and bake on baking sheet at 325 degrees for 45-50 minutes. Makes 6 servings.
