GREAT PUMPKIN COOKIES 
1 c. flour
1/2 c. quick oats
1/2 c. shredded coconut
2 tbsp. wheat germ
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 c. softened butter
1/2 c. firmly packed brown sugar
1/2 c. sugar
1 egg
1/2 tsp. vanilla
3/4 c. Libby's solid pack pumpkin
1/2 c. raisins
1/2 c. chopped walnuts

Combine first 7 ingredients in a bowl. Cream butter and sugars in large mixer bowl. Add egg and vanilla; beat until fluffy. Add dry ingredients alternately with pumpkin, beating well after each addition. Stir in raisins and nuts. Drop by rounded tablespoon onto lightly greased cookie sheet. Spread with metal spatula to 3/8 inch thickness. Bake in moderate oven (350 degrees) 15 to 20 minutes or until lightly browned. Cool on racks. Makes 2 dozen.
