PRIZE WINNING CHEESE CAKE 
Preheat oven to 275 degrees. Use middle shelf. Make graham cracker crust and line a very lightly greased 9 inch spring form pan, bottom and sides. Use 1 package of crackers from box, plus 1 cup of sugar and 1/3 cup butter.

FILLING:

6 eggs, extra large, separated
3 (8 oz.) pkg. Philadelphia cream cheese
1 c. sugar
1 tsp. vanilla

Mix together egg yolks, cheese, sugar and vanilla. Beat until creamy. Beat egg whites until stiff and fold into mixture. Pour into prepared crust and bake at 275 degrees for 65 minutes. Remove from oven and immediately run a knife around the pan to prevent cake from sticking. Cool 1 hour - add topping.

TOPPING:

1 pt. sour cream
1/3 c. sugar
1 tsp. vanilla

Mix sour cream, sugar and vanilla and cover cooled cheesecake. Bake at 275 degrees for 7-9 minutes. When cool, decorate with strawberries cut in fourths placed on top like a flower.
