RAISIN PECAN BRAN MUFFINS | |
1/2 c. shortening 1 1/4 c. sugar 2 eggs 2 c. buttermilk 2 tbsp. molasses 1 c. Nabisco 100% Bran Flakes 2 c. Kellogg's All Bran 2 1/2 c. flour 1 tsp. salt 2 1/2 tsp. baking soda 1 c. raisins 1 c. broken pecans 1 c. boiling water Pam spray Preheat oven to 400 degrees. Cream shortening and sugar. Add eggs, buttermilk and molasses. Pour water over bran flakes and all bran. Add to first mixture. Mix well, then add flour, salt and soda; mix well. Stir in raisins and pecans. Spray muffin pans with Pam and fill 2/3 full. Bake at 400 degrees for 20 minutes. Batter can be stored for weeks in the refrigerator. |
