SPICED - GLAZED CARROTS | |
1/2 lb. carrots, scarped and sliced into thin strips 3 tbsp. orange juice 1 tbsp. butter 1 tbsp. brown sugar 1/8 tsp. ground cinnamon 1/8 tsp. ground cloves 1/8 tsp. salt Combine carrots and orange juice in a 1 quart casserole. Cover with plastic wrap. Microwave on high for 5-6 minutes. Let stand covered for 3 minutes. Place butter in a 1 cup glass measure, microwave in high for 35 seconds. Stir in sugar, cinnamon, cloves, and salt. Drain carrots. Pour glaze over carrots and stir well. Cover with Saran Wrap. Microwave on high 20 seconds or until sugar is melted. Stir well. Yield 2 servings. |
