QUICK AND CHEESY VEGETABLE
CASSEROLE
 
This is a dish that you can make a whole meat from, especially if served with a tossed salad. And it's very easy, delicious and nutritious. 2 (4 oz.) c. Kraft Cheez Whiz (plain or mild Mexican) About 30-40 Ritz crackers (i.e., one stack plus a few more) 2/3 of a stick of butter, melted

Preheat oven to 350 degrees. Make sure vegetables are completely thawed and place them in a large oven-proof casserole dish. Place unopened cups of Cheez Whiz in a shallow saucepan with some boiling water long enough to heat the cheese to a pouring consistency. Open containers and pour Cheez Whiz evenly over the top of the vegetables.

Crumble the Ritz crackers and spread them evenly over the vegetable mixture. Place in oven. After casserole has baked for 15 minutes, pour the melted butter evenly over the crumb topping and then bake for another 20-25 minutes.

For variation, add a cup or so of diced cooked ham, chicken or turkey to the vegetables.
