BROCCOLI CHEESE AND RICE
CASSEROLE
 
2 or 3 c. broccoli (chopped)
2 c. cooked rice
1 can cream of chicken soup
1 can Cheddar cheese soup
1 jar Cheese Whiz (8 oz.) jalapeno for hot variation
1 c. shredded Cheddar cheese
Salt and pepper

VARIATION: Add 2 cups cubed cooked meat i.e., ham or chicken. Cook, season and drain broccoli. Add to hot rice. Mix soups, cheese whiz, and 1/2 cup shredded Cheddar cheese. Pour over broccoli rice mixture. Mix well. Pour into large casserole dish. Top with remaining 1/2 cup grated cheese. Bake in 400 degree oven for 20 minutes until hot and cheese is melted.

I have had this recipe for a little over two years and just love it. I have yet to find one my family likes more than this one! I have found that if you do add chicken to it - it makes it a heartier meal.
