PUMPKIN PUDDING SQUARES 
29 oz. can pumpkin
2 1/2 c. evaporated milk
2 c. sugar
1 c. all purpose flour
1/2 c. butter, melted
3 eggs, lightly beaten
1 tsp. vanilla extract
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
Whipped topping

Preheat oven to 450 degrees. Grease 13 x 9 x 2 inch baking pan. In large mixer bowl, at medium speed, beat pumpkin, evaporated milk, sugar, flour, butter, eggs, vanilla, nutmeg, cinnamon, baking soda, and salt for 1 minute or until smooth. Pour into pan and bake for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cut in squares. Serve warm or cold with whipped topping. Makes 12 (3 inch) squares.
