CHICKEN RICE ARTICHOKE SALAD | |
3 c. cooked diced chicken 1 pkg. chicken Rice-A-Roni 2 (6 oz.) jars marinated artichoke hearts 3/4 tsp. curry powder 2 (4 oz.) cans mushrooms 4 green onions (tops and all) 1/2 green pepper, chopped 14 slices pimento olives 1/3 c. mayonnaise Cook rice as directed, but omit butter. Cool. Add onions, green pepper and olives. Drain artichoke hearts. SAVE MARINADE and mix with mayonnaise and curry powder. Blend well. Add artichoke hearts which have been cut in half and diced chicken to rice mixture. Toss with dressing. Add mushrooms. If a little dry, add a bit more mayonnaise. |
