PISTACHIO SALAD 
1 (3 1/2 oz.) pkg. instant pistachio pudding
1 (12 oz.) container frozen non-dairy whipped topping, thawed
1 (30 oz.) can fruit cocktail, with juice
1 c. cooked rice
1 c. mini marshmallows

In large bowl with rubber spatula combine pudding, non-dairy topping, fruit cocktail with juice, rice and marshmallows. Stir until well blended. Chill until ready to serve.
