FARMER JONES SPECIAL 
1 c. chopped celery
1 c. chopped onion
1 tbsp. butter
1 c. tomato juice
1 lb. ground beef
1 tsp. salt
1 can tomato paste
1 c. brown or white rice
1/3 c. grated Parmesan cheese

Cook celery and onion in butter until golden. Cover, cook until vegetables are tender. Add tomato juice, paste, ground beef and salt. Simmer 10 minutes.

Cook rice according to package directions. Place cooked rice in large 12 inch ovenware pie plate. Put meat mixture over rice, sprinkle with cheese. Broil for 2-3 minutes. Makes 8 servings.
