CHEESY POTATO CASSEROLE 
32 oz. bag hash browns, thawed
1 stick butter, melted
1 tbsp. salt
1/2 tsp. pepper
1 can cream of chicken soup
1 (16 oz.) container sour cream
1 (8 oz.) pkg. cheddar cheese
1 med. onion, chopped

Mix all ingredients and add topping.

TOPPING:

2 c. cornflakes, crushed
1/2 stick butter, melted

Bake for 40 to 60 minutes at 350 degrees.

Abolutely love this dish! Very simple & easy - yet VERY satisfying. I use almost two packages of shredded cheese & cut out the onion. I also do a bit more cornflake topping than the recipe calls for. It never lasts more than a day or two in my house. We eat it up!

I made this dish for my baby shower brunch and EVERYONE loved it and wanted the recipe!! I added some chopped green onions to the onion and sauteed them in the stick of butter before mixing into the potatoes. I have also tried sour cream with chives instead of regular sour cream and think it goes great with the potatoes. I prefer sharp cheddar for this dish. This recipe is super yummy and super easy!

This recipe has always been a favorite. I made it last year for a holiday party and added a pack of Spicy Ranch dressing (dry) to it. It was a HUGE success!!!!!

Meh. This recipe has too much butter and waaaaaay too much salt. Also, the onions need to be cooked prior to adding them to the casserole.

This is my absolute favorite dish to take to family gatherings. I add a little more cheddar cheese than it calls for (because you can never have enough cheese). I also don't use as much salt.. super close to 1 tbsp but not quite. :) This is delicious and we usually eat it in a few days. It makes a ton as well!
