ESCAROLE & SAUSAGE OVER MACARONI 
1 lg head escarole
1 lb italian sausage (sliced 1/4"-1/2")
3 cloves garlic
1/8 c. olive oil
salt & pepper
grated parm. cheese

This is mom's (lynne m.) escarole & sausage over macaroni. Wash escarole and break into small pieces. Boil until tender (apx. 20 min). Set aside. 2. Fry sausage,salt, pepper, and garlic in oil. 3. Add boiled escarole and serve over macaroni. (Top with parm. cheese)
