REUBEN CASSEROLE | |
1 (8 oz.) pkg. fine noodles, cooked 1 (16 oz.) can sauerkraut, drained 1 (12 oz.) can corned beef, crumbled 2 c. (8 oz.) Swiss cheese, shredded 1/3-1/2 c. Thousand Island dressing 2 med. tomatoes, peeled & sliced 1 c. rye crackers, crushed 1/4 tsp. caraway seeds In greased casserole, layer noodles, sauerkraut, and corned beef. Scatter cheese on top and pour dressing over all. Cover with tomatoes and sprinkle crumbs and caraway seeds on top. Bake, covered, in a preheated 350 degree oven for 40 minutes. Uncover and bake another 10 minutes or until top is bubbly and crumbs are browned. Serves 6 to 8. Warm Black Forest bread is good with this. |
