FRUIT PIZZA
DOUGH:

1 c. butter
1 1/2 c. sugar
2 eggs
2 1/2 c. flour
2 tsp. cream of tartar
1 tsp. baking soda
Pinch of salt

FILLING:

1 (8 oz.) pkg. cream cheese
1/2 c. sugar
2 tbsp. juice from fruit

FRUIT:

1 (6 oz.) can pineapple chunks
1 (8 oz.) can mandarin oranges
Fresh strawberries, kiwi, grapes, bananas, peaches, or whatever fruit you desire; arrange accordingly

DOUGH: Cream butter, sugar and add eggs; sift flour and next 3 ingredients and add to creamed mixture. Spread dough onto buttered pizza pan or jelly roll pan. Bake at 400 degrees for 8 to 10 minutes. (Do not overbake.)

TOPPING: In mixer bowl whipped cream cheese, sugar, and 2 tablespoons juice from fruit. Spread over cooled cookie dough and chill. Arrange fruits (drained) over mixture. Save the juice, put juice in sauce pan and thicken with 1 to 2 tablespoons cornstarch. Cook until thick and clear. Add a few drops of yellow food coloring and pour cooled juice over fruit (like a glaze). Chill in refrigerator. Cut into squares or pie shape. Serve.
