CLAM CHOWDER (With Minced Clams) | |
1 med. sized potato 1 sm. onion (peel and dice) Water to make 3/4 c. liquid Bacon fat (as from 2 strips bacon) 1 1/4 c. milk 1/4 c. milk with 2 tsp. flour 1 (8 oz.) can minced clams Drain and measure juice, adding water to make 3/4 cup liquid. Melt bacon fat in saucepan and add potato, onion and liquid. Bring mixture to a gentle boil. Reduce heat, cover saucepan and cook until potato is tender, 15 to 20 minutes. Add 1 1/4 cups milk. Stir well. Mix 1/4 cup milk with flour until smooth. Slowly stir into clam mixture, stirring constantly, until flour is cooked. Add clams, salt and pepper and stir until hot. |
