MOUND DIABLO 
1 lg. ripe or 2 med. avocados
8 oz. sour cream
1 pkg. taco seasoning mix
Lemon juice
Pinch of salt
8 oz. sharp cheddar cheese
8 oz. Monterey Jack cheese
Sm. tomato
4 green onions
Chopped black olives

Mash up the avocados to a thick paste. Spread evenly on a serving dish. Squirt lemon juice on top of avocado (to retain color); sprinkle salt over avocado. Mix 1/2 taco seasoning mix with sour cream. Spread mixture over the avocado as a layer.

Shred sharp cheddar cheese; sprinkle cheese over sour cream mixture. Shred Monterey Jack cheese; sprinkle over cheddar cheese. All these things should be layered and have the appearance of a mound. Chop tomatoes, green onions and black olives; sprinkle over the top. Serve with sturdy restaurant-style tortilla chips and dig in.
