HARD SAUCE OR BRANDY BUTTER 
4 oz. butter (preferably unsalted)
6 oz. sieved icing sugar
Squeeze lemon juice
1-2 wine glasses brandy or grated rind and juice 1-2 large oranges

Beat together butter and sugar until light and creamy. Add lemon juice and brandy gradually. Beat until smooth. Refrigerate until set.

Serve with Christmas pudding and mince pies or other desserts.

Be very careful on adding the brandy, too much the butter curdles. You only need about 1-3 tbsp of it, not the wine glass size. It is very sweet with a tarty bite to it.
