GINGERED CARROTS 
4 c. sliced carrots
1 tsp. oil
1 tbsp. candied ginger
2 tbsp. wine vinegar
1/4 tsp. salt
1/8 tsp. garlic powder
2 tbsp. chopped parsley

Cut carrots into 1/8th inch diagonal slices. Heat oil in heavy pan and add carrots. Stir fry for 1-2 minutes. Add remaining ingredients; cover and cook over low heat for about 15 minutes or until carrots are tender. Serves 6.
