TEXAS STYLE FRIED FISH 
4 (1 lb.) trout, boned, cut in half
1/2 tsp. salt
Dash of pepper
1 tsp. lemon juice
2 eggs, beaten with 1/2 c. milk
1 c. flour
Cornmeal
2 c. oil or shortening

Add salt, pepper and lemon juice to eggs and milk. Coat fillets with flour and dip in egg mixture and coat with cornmeal. Fry in deep fat preheated to 350 degrees. Transfer to baking sheet and cook in 350 degree oven for about 3 minutes.
