VEGETABLE CHEESE SOUP 
6 c. water
2 chicken bouillon cubes
2-3 c. diced potatoes
2 c. diced onions
1 (20 oz.) pkg. California mix vegetables
2 cans cream of chicken soup
1 lb. cubed Velveeta cheese

Bring first 2 ingredients to a boil. Add next 2 ingredients, cook until tender. Add mixed vegetables, cook until tender. Add last 2 ingredients, cook over low heat until cheese is melted. Wonderful on a cold winter day!
