SURPRISE CHICKEN 
2 broiler fryers, quartered or cut into serving pieces
1 (8 oz.) bottle Russian dressing
1 (10 oz.) jar apricot jam or preserves
1 (1.5 oz.) pkg. dry onion soup mix

Place chicken pieces in large, shallow baking dish. In blender, combine Russian dressing, apricot jam, and onion soup mix; blend until fairly smooth. Spoon mixture evenly over chicken. Bake at 350 degrees about 1 hour until lightly browned and tender. Baste with juices occasionally. Makes 8 to 10 servings.
