QUICHE 
1 (10 inch) pastry pie shell
6 oz. Mozzarella cheese
3 to 4 green onions, chopped (green part only)
1/2 c. chopped mushrooms (or 1 sm. can)
6 eggs, lightly beaten
1 1/2 c. half & half
1/4 lb. cooked sausage, very well drained (opt.)

Paint inside of pie shell liberally with beaten egg. Bake at 450 degrees about 7 to 10 minutes, just until it is beginning to brown. Set aside to cool. It will remain crisp without getting soggy from the filling.

Place cubed cheese, green onions and mushrooms in bottom of pie shell (sausage if using). Beat half and half with the eggs and pour this carefully over cheese and vegetables. Salt to taste. Bake at 375 degrees for 30 minutes until filling no longer jiggles in the center. Let rest 10 minutes before cutting. Serve at room temperature. Serves 6.
