ZUCCHINI QUICHE 
1/2 c. seasoned bread crumbs
3 med. zucchini (1 1/4 lbs.)
2 tbsp. olive oil
2 c. shredded Yoelsberg cheese
2 c. milk heated
2 med. onions, sliced
4 lg. eggs
1 lg. ripe tomatoes
2 lbs. sausage links

Butter 9 inch baking dish. Sprinkle bottom with bread crumbs. Cut zucchini in 1/4 inch slices. In large skillet heat oil. Brown zucchini on both sides. Layer in baking dish, sprinkle with cheese (1/2 cup), layer zucchini and sprinkle with cheese. Add 1 tablespoon oil in skillet, cook onions until tender. Sprinkle top with remaining cheese.

Beat eggs, basil, salt, stir in hot milk. Pour mixture over all. Bake at 375 degrees for 30 minutes or until set and tested comes out clean.
