“GARLIC LEMON CHICKEN BREAST” IS IN:

GARLIC LEMON CHICKEN BREAST 
2 tablespoons grated lemon rind (fresh)
4-5 cloves garlic, crushed
2 tablespoons soy sauce
1/2 cup fresh lemon juice
2 teaspoons Hungarian paprika
4 boneless, skinless chicken breasts
olive oil
salt, pepper, garlic powder (for sprinkling)
4 sprigs Italian parsley
4 onion slices (sliced in thick rings)
heavy duty aluminum foil

Cut 4 rectangles of heavy duty aluminum foil, each about the size of 1/2 a standard cookie sheet.

Combine first 5 ingredients (this can optionally be done in a blender).

Spray (or brush) the 4 large rectangles of aluminum foil with olive oil. Place chicken in center; brush with lemon/garlic mixture, then sprinkle with salt, pepper, and lightly dust with garlic powder.

Place a slice of onion and a sprig of parsley over each. Fold up aluminum into a loose, square packet and crimp edges tightly to seal well. Place in a shallow baking dish or on the grill.

Bake at 350°F for about 50-60 minutes (this depends on the size of each chicken piece).

4 servings.

For those that hesitate to use Soy Sauce - due to the sodium...there is now a substitute. Cannot tell the difference. Its Coconut Aminos.. Approx., 140 mg. of sodium - per 1 teaspoon. Think I found it near the Soy Sauce in the store.

I wanted a recipe for large chicken breasts in hopes that they would be moist. (I rarely cook or eat chicken breasts bc they are so dry!) I saw this recipe with 16 star reviews and thought I'd try. Now, I'm adding #17! This was a hit for my family! It was delicious and the large breasts were so moist and tasty! Will be making again! Thanks!

Chicken was very tender but lemon was the only flavor. I will make again but only with half the lemon juice. I cooked the chicken in a covered dish and I tried to reduce the sauce with corn starch but it still came out thin.

Fantastic recipe. Its hard to believe something so simple could be so delicious. I prepared this - in addition to another recipe from Cooks.com - for Red potatoes in foil.

Entire meal was foil wrapped and soooo good. This will be a regular for sure. As always, anything with CM - will be a sure hit!

This was very yummy. I used my blender to combine the ingredients. I put 3 pieces if chicken in an 8x8 pan covered with foil and baked it for 45 minutes. I'll take any suggestions for thickening up the lemon garlic sauce. I used gluten-free soy sauce. Even my picky child liked it!

Instead of using aluminum foil I put butter under the skin. Chicken retained moisture. Also when short on ingredients, I have just used lemon pepper and butter. ...........

Easy to make, looks complicated and "fancy", tastes amazing, and my husband and kids raved about it. I loved it and am disappointed I only made 4 breasts- next time I'm doubling it and having leftovers! I love the way the foil kept the marinade around the chicken as it cooked- it kept it moist and tender. Will be doing that again, and I'd also love to try it on the BBQ.

I happened to have enough at home to make a single portion of this recipe, but I was short paprika, garlic powder, onions, and parsley. It turned out really well, and I think it would've been even better with all of the seasonings (mine was a little lemony). Not to mention it was really easy to make, and uses lots of ingredients most people would have already. Thanks for posting!
