MOM'S PEANUT BRITTLE 
1 c. sugar
1/2 c. white syrup
1 c. roasted, salted (or raw) peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

1. In 1 1/2 quart casserole, stir sugar and syrup. Microwave high for 4 minutes.

2. Stir in peanuts. Microwave high 3-5 minutes.

3. Add butter and vanilla; blend well. Microwave 1-2 minutes.

4. Remove, add soda, stir gently. Pour onto lightly greased cookie sheet and cool 1/2 to 1 hour.

Note: When using raw peanuts, add them to sugar mixture in step 1 after 2 minutes, together with 1/8 teaspoon salt. Continue with remaining 2 minutes on high.

Since microwave ovens vary in power, you may need to adjust your cooking time.
