FAVORITE ZUCCHINI BREAD 
3 eggs
1 c. oil
1 c. white sugar
1 c. brown sugar
2 c. shredded zucchini
1 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. each cloves and nutmeg
2 tsp. cinnamon
1 c. chopped nuts

Beat together sugars, oil, eggs and vanilla. Add sifted dry ingredients; mix to blend. Add nuts.

Pour batter into two greased 9x5 inch pans. Bake in 350 degree oven for 1 hour or until bread tests done (check at 40 minutes and if top is getting too dark, tent with foil). Cool on rack 10-15 minutes. Keep fresh by wrapping in foil. Freezes great.
