ZUCCHINI BREAD WITH PINEAPPLE 
1 c. Crisco oil
3 eggs
2 c. sugar

Mix well.

2 c. grated zucchini
1 lg. can crushed pineapple (drained)
1 tsp. vanilla

Mix well.

3 c. flour
1 tsp. baking soda
3/4 c. chopped nuts
1 tsp. baking powder
1 tsp. salt

Mix well. Bake at 350 degrees for 3/4-1 hour. You can use 2 large or 3 small bread pans, greased and floured. Can be frozen.
