PEANUT BUTTER COOKIES WITH A
CHOCOLATE BITE
 
1/2 c. shortening
3/4 c. creamy peanut butter, divided
1/2 c. sugar
1/4 c. light corn syrup
1 tbsp. milk
1 1/2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1/4 c. semi-sweet chocolate morsels

Combine shortening and 1/2 cup peanut butter; beat until creamy. Gradually add sugar, corn syrup and milk, beating well. Combine flour, soda and salt; stir well. Add flour mixture to creamed mixture; mix well.

Shape into 10 inch roll wrap in wax paper. Chill at least 2 hours, unwrap, roll cut into 1/4 inch slices. Place half of slices on cookie sheet 2 inches apart. Spoon 1/4 teaspoon peanut butter into center of each cookie. Press 4 chocolate chips into each peanut butter. Center top remaining cookie slices. Seal edges with fork. Bake cookies at 350 degrees for 10-12 minutes. Let cool completely on wire racks. Makes about 2 dozen.
