SPANISH GAZPACHO | |
1 clove garlic, mashed 2 slices dry bread 1/2 c. water 1/4 c. olive oil 1 green pepper, seeded 4 med. tomatoes, peeled & seeded 1/2 sm. cucumber, peeled & seeded 1/2 med. onion 6 tbsp. wine vinegar 2 c. water Salt Croutons Marinate (1 hour or more) the garlic, bread, water and olive oil. Put mixture in blender and blend in the pepper, tomatoes, cucumber and onion. Add vinegar, water and salt to taste. Chill several hours to blend flavors. Serve with garnish of croutons and chopped tomatoes, pepper, onion and cucumber. |
