CORONADO GAZPACHO 
1/2 c. olive oil
1/4 c. lemon juice
6 c. tomato juice
1/2 c. finely chopped onion
2 tomatoes, peeled & chopped
2 c. finely minced celery
1/8 tsp. Tabasco
2 tsp. salt
1/4 tsp. pepper
2 green pepper, finely chopped
2 cucumbers, peeled & diced
Croutons

Beat olive oil and lemon juice together. Stir in tomato juice, onion, tomatoes, celery, Tabasco, salt and pepper. Taste; add more seasoning if desired. Chill at least 3 hours before serving. Add green peppers and cucumber an hour before serving. Garnish with croutons. Serves 8-10.
