POTATO BREAKFAST CASSEROLE 
3 med. potatoes
6 slices diced bacon
1/4 c. minced green onion
1 c. shredded Swiss cheese
1/2 c. cottage cheese
5 beaten eggs
1/2 tsp. salt

Cook potatoes until tender. Peel and dice to make 2 1/2 cups. Fry bacon and drain. Lightly brown onions and potatoes in bacon drippings.

Combine cheeses, eggs and seasonings. Stir in bacon, onions and potatoes. Turn into shallow buttered baking dish. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees and bake another 15 minutes.
