HOME-MADE SALAMI 
5 lbs. ground beef
2 1/2 tsp. garlic powder
5 rounded tsp. Morton's Quick salt
2 1/2 tsp. cracked pepper
2 1/2 tsp. mustard seed
2 tsp. Old Hickory smoked salt (or like substitute)

Mix spices in cup. Pour over ground beef and mix well (get those hands going). Place in refrigerator, UNCOVERED, for 1 day. Mix well and place in refrigerator COVERED for days 2, 3, and 4. On day 5 divide the mixture into 5, 1 pound loaves. Place the loaves on a broiler pan or rack in the oven and bake for 8 hours at 150 degrees. Remove and cover with a towel until cool. Wrap each loaf and refrigerate or freeze it.
