HALUSHKI 
3 lg. potatoes, peeled, grated fine
1 tsp. salt
1 beaten egg
2 1/2 to 3 c. flour

Grate potatoes; food processor works well. Add salt and egg, stir. Mix in 2 1/2 cups flour. Add remaining flour as needed to make dough soft, not sticky. Have prepared a pot of boiling water.

With dough on a plate, scrape off teaspoon at a time. Add to boiling water. Stir often. Dumplings will float to top of water. Cook 10-15 minutes. Drain, rinse quickly with cool water. Keep warm until ready to serve. Add melted butter.

My mom used to make these, after boiling them, she would fry them with shredded cabbage. Sometimes instead of grated potatoes she would use leftover mashed potatoes. Either way they were delicious.

This potato halushski was served in our house with a cheese sauce over it. Melt velveeta (brick) about 4 thick slices in water, thicken with milk and flour mixture and stir until smooth cheese sause add little butter and pour over the drained potato halushskis. Great side dish!

My mother made haluski and then toppped them with a sauce made from onions cooked in melted butter until soft and the added a lot of cheddar cheeses until it melted. the sauce was then mixed with the haluski. These were great right out of the pan and great reheated the next day.

I"m 60 yrs old & come from a long line of good Hunkies/Pollocks. I used to beg my mother to make this delight & little did I know at the time that it was ALL done because we didn't have a lot of money to feed 7 people & this stretched the budget for my parents. After rinsing, they would be lightly pan sauteed with onions which were pre-sauteed in butter & then served in a big bowl. We would add a table spoon of cottage cheese or two on each plateful, very lightly salted (try it !!!) and came back for more and more. I & my siblings thought we were at the Waldorf!! I'm drooling as I write this and am going to make them for dinner tonight!

My mom made these quite often when I was a child. She would fry butter and onions and add the dumplings when they were cooked. We'd sprinkle parmesean cheese on them. My mom would also make potato cakes to serve with the dumplings. Thanks, Mom!

My wife and I make this recipe passed down through the generations. We use cottage cheese (which I will not eat in anything else). We also have a special pan my Papa made by drilling 3/4 inch holes in a 14 inch round frying pan. The dumpling mix is put into the pan and pushed through the holes with a spatula,into the boiling water, makes perfect dumplings every time.

Oh, the memories these little dumplings bring back for me. My mom would always brown the butter before adding the pillows of potatos. She would also add cottage cheese to the mix and oh my what a meal we would have. She was a cook that would make the best meals from so little. Some would consider us poor but I never felt that way then and now that I'm older I realize that we were far richer then those who had the money to buy what their hearts desired. Thanks for bringing back a recipe that I thought had been lost forever. God bless!

Our family would make the potato dumplings (just potatoes and flour) and mix with cabbage fried in bacon drippings. Add plenty of salt. We used to hand grate at least 10 pounds of potatoes and take turns stirring in the flour until the spoon stood straight. We now use a KitchenAid and we make this in no time! This is still a family favorite!

I'm 70 years old and I grew up eating halushki. My grandmother passed down the recipe to my mom, then me, now it's down to my grandchildren. But, we added to the potato dumplings, cream cheese, butter and salt to ours. Yummy.
