SEAFOOD CASSEROLE 
Best with fresh seafood, but frozen may be used. 1 lb. scallops 1 lb. mushrooms

Melt butter over low heat, add 1 clove fresh garlic. Remove garlic pieces. Pour boiling water over shrimp, drain and peel. Rinse scallops, cut if large. Slice clean fresh mushrooms. Add mushrooms, shrimp, scallops to butter in skillet until juice comes from mushrooms and scallops. Add crumbs (I use seasoned Italian) to thicken slightly.

Put in casserole, sprinkle with buttered crumbs. Bake in moderate oven for about 1/2 hour. Take out and sprinkle with grated Cheddar cheese, bake until cheese melts. The number of servings depends on size of shrimp, size of mushrooms, scallops. Makes 4 generous servings.

Amount of butter may be varied, butter substituted. Have used sea legs for part of seafood. Not really a diet dish, but can be less sinful with less butter. Cheese (optional). It's good!
