CARROT CAKE WITH CREAM CHEESE FROSTING | |
4 eggs 1 1/2 c. oil 2 c. sugar 2 c. flour 2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 3 c. grated carrots 1/2 c. chopped nuts Beat eggs, mix with oil, then sugar. Combine dry ingredients, then mix altogether. Add grated carrots and nuts. Bake at 350 degrees in (2) 8 or 9 inch pans 30 - 35 minutes (tube pan 1 hour). FROSTING; 1 lb. confectioners sugar, sifted 1/4 lb. butter, softened 8 oz. pkg. cream cheese, softened 2 tsp. vanilla 1/2 c. chopped pecans or walnuts (optional) Combine butter and cream cheese. Mix in sugar. Add vanilla and nuts. Ice carrot cake and refrigerate. |
