ENGLISH MUFFIN BREAD 
8 c. bread flour
3 pkg. dry yeast
3 tsp. salt
1 1/2 tbsp. sugar
1/2 tsp. baking soda
2 c. milk
1 3/4 c. water

Can use Rapid Rise yeast.

In a large bowl, combine 5 cups flour, yeast, salt, soda and sugar. Heat milk and water to very warm, but not hot, about 110 degrees. Add to flour mixture and beat with electric mixer about 1 minute. Add remaining flour and mix well by hand. Dough will be sticky. Grease three 8 1/2 x 4 1/2 inch bread pans and sprinkle with yellow corn meal. Divide dough evenly into the 3 pans spreading out to sides. Sprinkle with corn meal again.

Let rise about 45 minutes or until dough reaches top of pan. Bake 25 minutes at 375 degrees. Remove from pans and cool on racks. Can freeze.

Can add about 3/4 cup raisins and chopped nuts (plus 1 1/2 teaspoons cinnamon) for raisin bread.
