SPINACH-CHEESE PASTRIES 
DOUGH:

1/2 lb. (8 oz.) pkg. cream cheese
1 c. soft butter
2 c. sifted flour

Combine butter and cheese, softened to room temperature. Add flour. Knead until firm (chill overnight, if possible). Roll out to 1/8" thickness; cut out 2" rounds (larger, if preferred).

FILLING;
1 med. onion, finely chopped
3 tbsp. olive oil
1 pkg. frozen chopped spinach, thawed & well drained
1/2 tsp. salt
1/4 lb. Feta cheese, crumbled
4 oz. cottage cheese
A little flour to hold together

Saute onion in oil until soft; add spinach and salt. Cook over low heat until tender. Mix cheeses together and add to spinach-onion mixture. Place a little filling on each dough round; fold over. Moisten edges and crimp. Prick tops with fork.

Bake on ungreased cookie sheet at 400 to 425 degrees for 15 to 20 minutes until golden brown. Can be frozen and saved before baking.
