SPINACH SALAD | |
1 pkg. fresh spinach 1 pkg. long grain and wild rice stuffing mix 2 tbsp. crumbled bacon 1 hard cooked egg, chopped 1 c. water 2/3 c. oil 1/4 c. vinegar 1 tsp. mustard Wash and drain spinach; pat dry. Place spinach in salad bowl. Top with contents of crumb packet, bacon and chopped egg. Bring water and seasoning packet to boil. Reduce heat. Cover and simmer 6 minutes; stir in oil, vinegar and mustard and baring back to a boil. Pour hot dressing over greens and then mix lightly but thoroughly; serve. |
