FRIED CORN OYSTER 
4 med. ears of corn
1/4 tsp. salt
1 tbsp. sugar
1 1/2 tbsp. flour
1/2 tsp. baking powder

Cut kernels from corn, use back of knife to scrape down any pulp. There should be about 1 1/4 cups. Beat egg until thick and ivory colored, add salt, sugar, flour and baking powder; beat to combine using a heaping tablespoon of the mixture for each oyster. Bake on well buttered griddle, turning to brown on both sides. Keep warm if necessary in a low oven. Makes 16.
