BEAN SAUSAGE 
2 c. cooked pinto beans
1 c. dry bread crumbs
2 beaten eggs
1 tbsp. minced onion
1/4 tsp. Italian seasoning
2 shakes of garlic
1/4 tsp. sage

Mash beans, mix well with crumbs, eggs (reserve a little for coating patties), onion and seasonings. Moisten with milk if needed, shape into patties. Dip in the reserved egg then roll in fine bread crumbs. Brown in shortening. Let set overnight and warm up, best then. Serves 4.
