BUCKAROO BEANS 
2 c. dry pinto beans (soak overnight)
6 c. water
1 lg. onion (chopped coarsely)
1 sm. bay leaf
Salt and pepper

Cook slowly for 1 1/2 hours. Remove the bay leaf.

Add: 1/2 lb. sausage (brown the sausage) 1 (16 oz.) tomatoes 1/2 lg. green pepper (chopped) 1/2 tsp. oregano 1/2 tsp. powdered mustard 2 tbsp. chili powder 2 tbsp. brown sugar

Add all these ingredients to the beans and cook 2 more hours--very slowly. This is a very good dish served with corn bread.
