RED BEANS AND RICE | |
1 lb. dry red beans 2 qts. water 1 ham bone, or ham hock 2 lbs. smoked sausage, or Cajun sausage 3 minced garlic cloves 1 lg. onion, chopped 1 green pepper, chopped 1 1/2 c. celery, chopped 1 bay leaf 1 tsp. Worcestershire sauce 1/4 tsp. Tabasco 1 tbsp. fresh minced parsley 1 1/2 tsp. salt (or to taste) 3 c. steamed rice Rinse and drain beans. Put in a large pot with ham bone. Add 2 quarts water. Bring to a boil and simmer 45 minutes. Cut sausage into 1 inch chunks. Add sausage and simmer 1 hour, stirring occasionally. Add garlic, onion, pepper, celery and bay leaf. Continue simmering 1 1/2 hours or until beans are soft. Add Worcestershire sauce, Tabasco, parsley and salt (if needed). Simmer a few more minutes and serve. Serve over rice. Hearty and delicious! |
