RED BEANS AND RICE | |
2 lg. cans kidney beans 1/4 c. olive oil 1 lg. onion (chopped) 1 green bell pepper (chopped) 2 tbsp. minced garlic 2 bay leaves 1/2 tsp. cayenne pepper 1 tsp. dried thyme 1/4 tsp. dried sage 1 tbsp. dried parsley 1 tsp. Cajun seasoning 1 lb. smoked sausage 2 c long grain white rice In skillet, heat oil over med. heat. Sauté onion, bell pepper, garlic in oil for 3-4 minutes. Empty kidney beans in large saucepan. Stir cooked vegetables into beans. Add all seasonings. Bring to a boil, then reduce heat to simmer for 30 minutes. Slice sausage and add to beans, continue to simmer for 30 minutes more. Prepare rice as directed. Remove bay leaves from beans. Serve over rice. |
