RED BEANS AND RICE | |
1 1/2 lb. kidney beans 2 lbs. sausage (smoked), sliced 3 med. onions, chopped 1 bell pepper, chopped 16 oz. tomato sauce Hot sauce and Tony Chacherie's Soak beans (about 2 fingers deep) in water overnight to rehydrate in crock pot. Add sausage, onions, pepper, tomato sauce, and about 16-ounces water to beans. Add hot sauce and Tony's to taste. Stir together. Cook in crock pot (covered) on HIGH 6-8 hours. Should be simmering slowly if on stove. Stir and check seasonings whenever able. Serve over rice. |
