RED BEANS AND RICE 
1 1/2 lb. kidney beans
2 lbs. sausage (smoked), sliced
3 med. onions, chopped
1 bell pepper, chopped
16 oz. tomato sauce
Hot sauce and Tony Chacherie's

Soak beans (about 2 fingers deep) in water overnight to rehydrate in crock pot. Add sausage, onions, pepper, tomato sauce, and about 16-ounces water to beans. Add hot sauce and Tony's to taste. Stir together. Cook in crock pot (covered) on HIGH 6-8 hours. Should be simmering slowly if on stove. Stir and check seasonings whenever able. Serve over rice.

Made this recipe for my work's potluck lunch today. Everyone said it was great! And it was so easy. I've never made red beans and rice before but the beans were like butter.
