RED BEANS AND RICE 
2 cans red kidney beans
1 med. onion, diced
1 clove garlic, diced
3 tbsp. olive oil
1 pkg. precooked smoked sausage links (Hillshire Farms summer sausage)

Saute onions and garlic in oil until onion starts to clear. Add undrained beans, cook over medium heat for 15-20 minutes, stirring occasionally. Cut sausage links in half. Lay on top of beans, reduce heat to simmer another 10 minutes.

Cook rice. Serve 1/2 cup cooked rice on plate. Ladle red beans over rice, add piece of sausage. May add melted Mexican Velveeta on top of beans to taste. Serves 4-6.
