CONFETTI RISOTTO 
2 tbsp. vegetable oil
1 sm. onion chopped
1 c. Uncle Ben rice
1 c. chicken broth
1 c. whole kernel corn
1/4 tsp. pepper
1/2 c. green onions sliced
1/2 c. red peppers strips
1/2 c. grated Parmesan cheese

In 2 quart sauce pan heat oil oven medium heat. Add onion and rice; cook, stirring about 3 minutes. Stir in broth, water, corn and pepper. Bring to a boil. Reduce heat and cover. Let stand until all liquid is absorbed about 5 minutes stir in cheese.
