FRESH APPLE CAKE 
3 c. chopped raw apple
1 1/2 c. all vegetable cooking oil
2 c. sugar
3 eggs
2 1/2 c. sifted self-rising flour
1 tsp. vanilla extract
1 c. chopped pecans

Peel apples and chop; set aside. Pour all-vegetable cooking oil into large mixing bowl; add sugar and eggs, beat well. Sift flour. Gradually add flour to cream mixture. Add vanilla. Gently fold in chopped apples. Grease a 10-inch tube pan and line with waxed paper; pour in batter. Bake at 350 degrees for 1 hour or until done. When cake is cool, remove from pan and drizzle on Sugar Glaze.

SUGAR GLAZE:

1 1/2 c. sifted powdered sugar
2 tsp. vanilla extract
3 tbsp. water

Sift powdered sugar into a bowl. Moisten with water and add vanilla extract. Drizzle over cake. (If glaze is too stiff, add a little water.) Decorate top of cake with nuts.
